While society did largely open up halfway through the year, which allowed Apple’s retail apparatus to return to normal operations, Apple continued to face once-in-a-few-decades challenges when it came to the supply chain, product manufacturing, and navigating its 154,000 employees through a pandemic.Īccording to my estimate, Apple experienced $10 billion of unmet demand in 2021 as a result of supply chain issues. Expectations that 2021 would be much smoother turned out to be optimistic. As discussed in last year’s Year in Review, the pandemic turned 2020 into a steady stream of unexpected challenges for Apple. Pour custard into tart shell and flatten the top. Remove from heat, whisk in butter and almond essence and fold through whisked egg whites. Return the mixture to the saucepan and whisk constantly until very thick. Add a little milk to the eggs, whisk quickly, then add the remaining milk and whisk until smooth. Heat milk in a large saucepan to just before boiling. In a separate bowl, whisk egg whites until soft peaks form. Weight the pastry case with pie weights and blind-bake for 15 minutes. Refrigerate the tart tin for a further 15 minutes. On a floured surface, roll the dough to 7mm thick and line a 24cm x 5cm fluted tart tin, trimming away the excess dough. Lightly knead until the dough becomes smooth, wrap with cling film and refrigerate for 30 minutes. For the pastry, combine flour, baking powder, butter, sugar and salt in a processor and pulse to form fine crumbs.
